#75: Learn How to Make Something New for Dinner

I've had this awesome recipe for a while, but I've never tried it. I decided to make it for Neil for Valentine's Day so he didn't have to cook and it was a hit! Here's the recipe.
Enchilada Soup
Brown and Set Aside:
1 Tbsp Oil
1 Lb Chicken Breast-Shredded

Saute:
1/2 C. Onion
2 Cloves Garlic
4 C. Chicken Broth

Whisk Together and Add:
1 C. Maseca (Found on Hispanic food Aisle)
3 C. Water

Add:
1 C. Enchilada Sauce
16 oz. Velveeta Cheese
1 tsp. Chili Powder
1/2 tsp Salt
1/2 tsp Cumin

Bring to a boil and add chicken. Simmer for 30 minutes. Serve with chips and salsa.

To make things a little easier on myself, I put the ingredients from Maseca down in the crock pot and let it heat up until the Velveeta cheese was melted. I then added the rest and let it all heat up.
It is so scrumptious!! Let me know if you try it!

#2 Quit Drinking Pepsi

I haven't had a Pepsi in 4 weeks! I'm considering this goal done, even though it will be something I have to work on every day. Thankfully I'm past the miserable phase! Kiwi Strawberry Shasta and A&W Rootbeer are my replacements. :)

#5 Go to Bed Before 11:30 Every Night for One Month

I did it! I skipped a couple Saturday nights since that's the night we usually do our dates, but I made up for them. It was super hard for me because I am very much a night owl! I don't think I would have been able to do it if it wasn't for this beautiful thing called Melatonin! I take one of those and about 15 minutes later I'm asleep!
I'm hoping that this taught me to go to bed a little bit earlier, but as you can tell by how late this is getting posted I didn't learn enough. :)

#31 Update Baby Books

So, I finally sat down and went through the girls baby books. I'm saddened by the fact that I didn't keep track of Taylor's stuff as well as I did with Holly. I know that the oldest child you always pay way more attention to stuff, but I always wanted to treat all my kids the same in that aspect. Call it the 2nd child in me. :) I can't go back and change what I've done, but I've challenged myself to do better in the future.
