#75: Learn How to Make Something New for Dinner

I've had this awesome recipe for a while, but I've never tried it. I decided to make it for Neil for Valentine's Day so he didn't have to cook and it was a hit! Here's the recipe.
Enchilada Soup
Brown and Set Aside:
1 Tbsp Oil
1 Lb Chicken Breast-Shredded

Saute:
1/2 C. Onion
2 Cloves Garlic
4 C. Chicken Broth

Whisk Together and Add:
1 C. Maseca (Found on Hispanic food Aisle)
3 C. Water

Add:
1 C. Enchilada Sauce
16 oz. Velveeta Cheese
1 tsp. Chili Powder
1/2 tsp Salt
1/2 tsp Cumin

Bring to a boil and add chicken. Simmer for 30 minutes. Serve with chips and salsa.

To make things a little easier on myself, I put the ingredients from Maseca down in the crock pot and let it heat up until the Velveeta cheese was melted. I then added the rest and let it all heat up.
It is so scrumptious!! Let me know if you try it!

Yum! This was SOO good! It sounds hard though, at least hard for your cooking-challenged sister. I'm especially concerned with how to serve it with ships and salsa. I don't know how I'll be able to do that. ;)

Ships and salsa eh? Hmm..I guess I could try a new ingredient. :) Sound great! I think I will be trying it.
(It's also funny that you posted this on the same day I'm posting mine-except that yours is tons better. :)

I'm so glad you posted this!! I've been meaning to bug you to get it. It was SOOO good! :) And the ships were the bestest part. :)
